I managed to find several Nanjing games. So I took some pictures of the PCBs.

This game I couldn't find any information on, so I'm not sure if it's 2MB in size.

This is the most information I could find for these games.
Naruto

King of Fighters R2
LC3664BML-10--------------64K SRAM
3CU0
TC55328J-25---------------32,768 WORD X 8 BIT CMOS STATIC RAM

And here's what I could find about the chips for FF7:
Final Fantasy VII
CY6264-7051---------------128K x 8 Static RAM
9630 312158
Chip with no #------------?????
MX E013345----------------16M-BIT [2Mx8/1Mx16] CMOS SINGLE VOLTAGE 3V ONLY FLASH MEMORY

So I wanted to know, if what I found was correct. And which chips would I need to find to make my own copy of FF7. The only flash memory chip I could find was for Naruto, but I don't know which chips I would need to find for the others.

Re: Nanjing Final Fantasy VII Doner Cart Help
Hey Lugia2009, you are the guy who is making the most awesome hack of the chinese FFVII, am I right? I think you should ask the nesdev guys directly about hacking the mapper, your project is so awesome that it will attract many people that will sought after this reproduction when your hack is finished!
Re: Nanjing Final Fantasy VII Doner Cart Help
It's not so easy... FF7 for NES uses a mapper that switches 32KB banks and whole ROM file is 2MB. Sure, there are mappers that are compatible with this setup, but...I guess it is hard to find a donor of these too!
Re: Nanjing Final Fantasy VII Doner Cart Help
Oversize BxROM (#34) with a 6-bit or larger register supports this sort of 32K banking. The board that infiniteneslives will produce for Action 53 supports oversize BxROM with a 6-bit register as one of its modes.
If you insist on using a donor rather than a newly produced board, you could start with an SNROM game and then rewire three CHR bits (not just one like SUROM) to control upper bits of the PRG bank. See my previous speculation about this.

That's why I'm glad I managed to track down some of the company's games before people started to scoop them up to make repro carts too.I think you should ask the nesdev guys directly about hacking the mapper, your project is so awesome that it will attract many people that will sought after this reproduction when your hack is finished!
But, hacking the mapper is very likely far beyond my abilities. I don't have any experience with going that in depth on working on a NES game.
I did luck out though. Samurai Shodown, Naruto, and King of Fighters are made by the same company as Final fantasy 7, and they all use the #163 mapper that final fantasy 7 uses. It's not so easy... from what I could find, Samurai Shodown and Naruto are also 2MB.
But I can't find any info about King of fighters. So, I'm not sure of that game's size.
I know which chip to buy for Naruto.
The trouble I'm having though is that from what I see, Samurai Shodown and King of fighters only have 2 ram chips.
Where would the ROM be stored on them?
Is the ROM chip on those games kept under one of the epoxy globs?
