Nintendulator v0.975 worked...
And, it's on the song menu...
alternate L, R, L, R, etc until the menu bar jumps to the bottom, then press start.

There is always a Bad Apple Impressive for a machine with no bitmap mode.

To me, probably the most impressive technical demo is blargg's flowing palette demo.
I don't know if these are online, but long ago loopy had made some awesome demos. One was a bouncing ball that would stretch and deform that I believe was drawn entirely with timed writes to the $2001 register. And one that I only know of as unfinished.nes, has 2 different parts that are really cool.
Years Behind is pretty neat for it's screen full of raster effects while playing DPCM samples, and also has some classic Chibi-Tech tunes.

Nah, definitely not. This would have been early 00s or maybe even late 90s. Anyways it seemed super impressive at the time, like most older stuff probably doesn't work as expected on NES, and probably would be underwhelming if it was looked at today compared to other things, so it was probably a bit of a stretch for me to mention it.
