Do you guys think eeproms last longer than eproms? Do eeproms suffer the same shelf life as an eprom would as far as being programmed/erased?

EPROMs matured earlier, so I'd expect comparable longevity for an EPROM that had been manufactured in the 1980s vs an EEPROM that had been manufactured in the 1990s.
By now, most companies have shut down their EPROM production lines. It looks like the only new thing left is OTP EPROMs from Atmel.
